Filled with inspiration from the cognac decanters in the new Lalique Suite, the team set off to explore the great cognac terroirs, such as Grande and Petite Champagne, Fins Bois, Bons Bois, Borderies... and came up with 'La Cognathèque'. Esteemed small producers and private houses are featured on the front page of the Journal du Cognac and tell stories of the authentic cognac houses.
Four new cocktail recipes were born from these cognac encounters in which the type of brandy, now in vogue in the world's greatest bars, can be discovered or re-discovered. An ideal drink as an aperitif or an after-dinner drink.

With 100 years of history behind it, the Prince de Galles takes you on a journey through a century of cuisine that have marked French culture, revived by locally sourced ingredients and a passion for seasonality.
Every decade reveals its treasures, forgotten dishes brought back to life in an uncomplicated, simple manner.
On the sweet side, the pastry Chef Tristan Rousselot takes his inspiration from the iconic sweet pastries and pays homage to the skills and expertise of French patisserie with his "Miroir" collection. Choosing between tradition and modernity is a near-impossible feat when looking at the menu.
On a weekly basis, a unique lunchtime set menu suitable for the timing requirements of a business lunch offers an innovative journey through time.
The great Prince de Galles classic dishes such as croque-monsieur with black truffle, the 19.20 burger, the Prince's club sandwich, the well-being salad, etc. are available at all times.


For its new brunch, Prince de Galles unveils a 'taste journey', combining brunch essentials (large selection of breads from Maison "L'Etoile du Berger", refined French cheeses, eggs declined in thousands of different ways...), exotic creations (sushis, Lebanese specialties...), and the five-star touch with exceptional and seasonal products: two choices of hot dishes offered every Sunday..
On the Sweet side, pastry Chef Tristan Rousselot and his brigade will delight your taste buds with a wide range of pastries, including both revisited classics and original flavors (gluten-free sweets also available). Finally, a corner of pancakes prepared on request will delight the entire family, with a wide choice of gourmet and fruity toppings. All products are homemade or sourced from local and regional producers. The products are seasonal and the offer is renewed throughout the year.

Breakfast at the 19.20 starts at 7.45 am. It is the place to meet for Parisians and those who believe that the early bird catches the worm.
Tailored for business meetings, the "8.20" set menu has all the essentials to help you get off to a good start. Hot drinks, fresh fruit juices and detox juices, croissants, sweet pastries of the day, and a range of savory delicacies that changes over the months, for example, sliced avocado toast flavored with lemon and 'fleur de sel' salt, smoked salmon and goat's cheese club sandwich, toasted mini-baguettes with turkey ham shavings and salted butter. Not forgetting a platter of fresh, seasonal fruit. Served all in one go, the "8.20" set menu gives every guest the freedom to pick and choose their own pace.
All the other breakfast classics are served 'à la carte'.
